Some businesses take the scenic route. Biscuit Mike’s started out on four wheels in 2020, serving up breakfast from a food truck. Six years later, Mike has officially put down roots in Longmont with Biscuit Mike’s first brick-and-mortar location.

And Longmont is eating it up. Biscuit Mike’s scored Best Sandwich/Sub and Best New Restaurant in this year’s Best of Longmont awards. Not too shabby for a business that built its following one biscuit at a time.

Open exclusively in the mornings, Biscuit Mike’s keeps things deliciously simple: fresh-baked biscuits every day, piled high with seriously good breakfast fixings. Fan favorites include the Sausage, Egg & Cheese, Fried Chicken & Honey, and “The Brian”, “The Heather” and “The Mike”.  They also feature a Biscuit of the Day that keeps things interesting and delicious.

There’s something pretty great about watching a local food truck grow up into a hometown staple. Supporting locally owned businesses means supporting the people who take a chance, build something from scratch, and invest in our community.
