"We are all about tacos! Mexican food is what we are passionate about, it is part of our culture and our heritage. We love being able to share our culture through our food. The best part of our day is to see our guests enjoy our food and margaritas with friends and family.
Our food is inspired by many regions of Mexico, with focus on Mexico City street and homemade food.
We started serving tacos in Longmont in 2017 after being in the industry for over 20 years, we wanted to create a place that was welcoming and not something with a corporate culture. Our business started with a taco trailer, a 1957 camper trailer that we repurposed and turned it into a taco trailer, her name is Adelita.
The Longmont community welcomed our food since the first day we started selling tacos, we were received with smiles, love and continued support. After serving tacos out of the taco trailer for over 2 years, we were able to find a more permanent home for Summit Tacos at 237 Collyer St. This location is great and has allowed us to welcome new customers.
We have a great patio where people can enjoy tacos, beer and a margarita with friends and family.
We have happy hour from 4-6, we welcome puppies out on our patio. We have seasonal items as we try to introduce as many mexican dishes as we can.
