Get your taco on! After working in the food industry for 10 years, Jose and Aidee, a proud Mexican, husband-and-wife-team, wanted to share the traditional tacos acorazados with their Longmont community. In 2019 they opened Blue Corn Tacos in Longmont at the corner of 15th Avenue and Main Street and have been serving up their unique and flavorful street tacos ever since.
For those who don't know, a taco acorazado is a type of taco that originated in the state of Morelos Mexico. It's a hearty and flavorful dish typically made with a large corn tortilla filled with various ingredients such as rice, meat, cheese, beans, and sometimes vegetables. The name "acorazado" means "battleship" in Spanish, which refers to the taco's size and robustness, resembling a battleship in shape and content. This is where the idea of Blue Corn Tacos originated.
